Extra Special Bruschetta


If you follow me on Instagram, you may have picked up on the fact that I LOVE my spinach!  It is the King of super foods and easy to add to pretty much everything!  This is my take on Bruschetta, perfect for a hot, nutritious breakfast or lunch Yummo! Xox

Serves 1
Ingredients
2 Slices of good quality sour dough rye bread - toasted (my personal preference)
½ Punnet of Cherry tomatoes cut in half
1 Cove of Garlic Crushed
1 tsp olive oil
Hommus to spread on the toast
A good handful of baby spinach leaves
Black Pepper to taste

Method
Toast your toast.  In a pan heat the olive oil and fry off the garlic, quickly add the cherry tomatoes and cook for a minute..  Add the spinach and cook until wilted.  Season with cracked black pepper.  Spread the toast with hommus and then top with the tomatoes and spinach.  Crack some more black pepper over the top to serve.
